Smart Data Driven Decisions: Microbial Risks in the Production Environment

As recent events have highlighted once more, managing microbial risks in a food production environment is key to manufacturing safe food. Despite employing best practices, environmental pathogens and spoilers still manage to cause havoc for the goods produced. By leveraging data models that complement traditional tools for supporting root cause analysis, a risk diffusion model allows us to look ahead: given the situation we observe today, what is our situation tomorrow going to be? This allows for proactive adaptation, improved interventions in transmission chains, and more efficient micro-organism detection program, to reduce the microbial risk of the product.
