The U.S. Department of Agriculture's (USDA) Food Safety and Inspection Service (FSIS) yesterday released the latest revision of Directive 7120.1, "Safe and Suitable Ingredients Used in The Production of Meat, Poultry, and Egg Products." This version replaces and cancels the previous revision, issued December 18, 2013.
The revised Directive includes one additional antimicrobial solution, two revisions to previously approved antimicrobial treatments, one new binder, one new "flavoring agent" solution, and three new solutions used for sodium reduction or other processing purposes. Directive 7120.1, which is officially intended for use by inspection program personnel but is also useful to all meat, poultry and egg producers and processors, is updated quarterly.
