The U.S. Department of Agriculture's (USDA) Food Safety and Inspection Service (FSIS) on Sept. 26 announced it has developed a new brochure titled “FSIS Food Safety and Food Defense: Information for In-Commerce Firms.” The brochure's purpose is to help inform firms that have foodservice operations — such as retailers, restaurants, arenas and stadiums — about the agency’s mission and the role of the FSIS compliance officer who may conduct food safety/defense surveillance activities at these companies.
The brochure describes what a business can expect when an FSIS compliance investigation officer arrives at their facility to conduct these surveillance activities. It provides an overview of the difference between food safety and food defense and outlines measures a firm can take, such as developing a food defense plan to further protect the food supply and public health. There is also information on where in-commerce firms may find additional resources and guidance on food defense.
